Novotel Manila buffet offers a fantastic blend of classic Indian cooking and modern Indian fare.


Novotel Food Exchange Manila buffet spreads went on hiatus to comply with Inter-agency Task Force (IATF) regulations during the pandemic. But it’s back last month, with four different themes for every Sunday of the month! I found myself one Sunday morning in Novotel Manila to partake of their Sunday brunch buffet, Cultural Palates.

On the day I was there, the Mumbai Express Sunday brunch buffet was being offered, which meant there were gorgeous spreads of authentic Indian cuisines. I particularly enjoyed the crispy papadams, curried veggies, spicy shrimps, chicken tandoori, Indian kebabs, exquisitely cooked mutton and beef dishes, and some creamy keema, an all-time favorite.

MUMBAI EXPRESS. Enjoy a well-balanced selection of authentic Indian dishes like lobster biryani, crab coconut curry, roasted chicken tandoor, roasted lamb leg, seafood curry, and more!


But having a theme does not mean other cuisines and favorite dishes would be absent. The themed Sunday buffet has the usual live cooking stations, dessert and salad bars, pizza and pasta, delicious carvings and platters, the finest seafood selections, cheese and charcuterie, and savory dishes from Novotel Manila’s culinary experts from various regions.

FISHERMAN'S CATCH. Food Exchange Manila brings you the freshest flavors from the sea! Novotel Manila actively supports sustainable fishing, so the hotel offers responsibly sourced seafood like mussels, oysters, clams, and prawns. Guests can choose to have them grilled, baked, or doused in one of the many fresh sauces available.

K-POP! The culinary team brings you what's in and what's POPular from the streets of Asia! Kalye-POP (K-POP) is a must-try gustatory adventure that will transport you to your favorite streets in Manila, Singapore, Bangkok, Jakarta, and Hanoi.


Apart from the themed Cultural Palates brunch celebration on Sundays, Novotel Manila buffet spreads are also open every Friday and Saturday. Lunch is from 12:00 noon to 2:30 PM, and dinner is from 6:00 PM to 10:00 PM on Fridays. Lunch is from 12:00 noon to 2:30 PM on Saturdays, and Sunday brunch starts at 11:30 AM until 2:30 PM.

ODE TO NONNA BY CHEF MASSIMILIANO. Executive Chef Massimiliano Pauletto cherishes his memory of his grandmother Nonna Esterina's cooking favorites, and now he's sharing it with the world!


The Friday and Saturday buffets are available for PhP1,688 net/person, while the Sunday brunch spreads are PhP2,488 net/person.
