The Batangas version of goto (ox tripe porridge), or kulawo in some parts of the province, is one that is all broth and entrails, usually beef tripe and intestines sans rice. It is cooked with ginger, garlic, pepper, and salt. It is best eaten with soy sauce, fresh onions, and calamansi (calamondin) dip and chili sauce to drown the rancidness of the innards and for extra flavor. Among the best gotohan or food shops selling goto are Gotohan sa Barangay in Antipolo del Norte, Lipa City; Tessie’s Goto and Bulalo in Tambo, Lipa City (near STAR toll exit); Lino’s Gotohan in Dagatan, Lipa City; and Irene’s Bulalo sa Kubo in Alangilan, Batangas City.
